Nerves, Recipes, Food, and Pregnant Jokes

Whoa - I've been spotting since last evening and I'm scared to death. I don't know whether to be hopeful, guarded . . . eeek!
I'd love to have another smokin' ribeye like the one Justin grilled the other night. The grillmaster is grilling chicken at this moment.
I charge Dallas, Amy, my sister, my brother, and my mom to get busy and post some good recipes.

I used to have a cat named Lucretia....because it sounded great when I'd open the door and yell "Cretia! Cretia! Get ya butt up on the porch!" I lived downtown near the hood so it seemed to fit :)

My recipe: I cooked this for Troy 2 nights ago and WOW! It was GREAT!

Skillet Fajitas:

2 Whole Wheat Flour Tortillas
1/2 Medium onion, cut into strips (i used a red onion)
1 large red pepper cut into strips
1/2 large jalepeno, minced
1/2 Medium zuchinni, cut into strips
1 1/2 tsp crushed garlic
1/2 lb boneless, skinless chicken breasts, cut into strips
1/2 cup salsa, drained if watery
Cheese, sour cream, and/or avocado

Spray a little olive oil in a nonstick pan. Add the onions, peppers, zucchini, and garlic. Cook until vegetables are tender and onion is browned. Remove from pan, cover to keep warm. Add chicken and cook until brown on both sides. Add the vegetables and salsa to the pan. Reduce the heat and cook for 3 - 4 minutes.

Spread veggies and chicken inside tortilla. Garnish with cheese, sour cream, and/or avocado.

Serves 2. If you use low fat cheese, etc each serving is only 254 calories and it's GOOD GOOD GOOD!

Tomorrow I'll post my 400 calorie Mother's Day lunch (which included dessert and no cardboard-like food!)

Here is the recipe for Jon's salsa fresca that you sampled recently. This stuff rocks my world! It's a little different everytime because we are not big fans of measuring--just fix it to your liking.

*Around 3 or so good red ripe tomatoes (do not use any of those crappy hot house tomatoes--they are flavorless)
*Most of a white onion
*A big wad of fresh cilantro
*A couple of habanero peppers (take out some of the seeds if you want to breathe-you could use jalapenos instead)

Chop all this up really finely, or you could cheat and use a food processor for a quick second. Then add:

*the juice of around 3 limes (FRESH!)
*Freshly ground sea salt (I don't know why, but it tastes better)

We end up tasting it and adding more of this or that. I prefer to serve it with the "Hint of Lime" tortilla chips. Fabulicious!
